Grade 1 cocoa is well-fermented (min 80% fully brown beans), properly dried to 7-8% moisture, with maximum 5% defective beans. Grade 2 allows up to 10% defects and slightly less consistent fermentation. Grade 1 commands a $200-400/MT premium and is preferred by European chocolate manufacturers.
How does EUDR affect cocoa sourcing from West Africa?
The EU Deforestation Regulation requires full traceability to farm level with GPS coordinates, proving no deforestation after December 2020.
